Winner Winner, Garlic Chicken Dinner

Today’s recipe comes from my friend Kate, who often graciously shows up on my doorstep and figures out how to make a dinner with the bare bones of what is left in my cabinets and fridge, ha!  Everyone needs a friend like her!

Garlic Chicken

Recently, while visiting Megan at her lovely home in Annapolis, we were looking for an easy dinner to make with ingredients she had on hand.  After finding some plump chicken breasts and fresh peeled garlic we decided to try out a recipe for Garlic Chicken.  A quick Google search and we found this Alton Brown Food Network favorite – 40 Cloves of Garlic and Chicken Recipe. We adapted the recipe to suit our needs using skinless chicken breast instead of a whole chicken, as well as dried, instead of fresh, thyme.
Ingredients
4 Chicken Breasts
1/2 cup plus 2 tablespoons olive oil
1  tbsp thyme
40 peeled cloves garlic
Salt and pepper 

Directions
1. Preheat oven to 350 degrees F. 

2. Season chicken with salt and pepper. Add 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat.

3. Remove from heat, and in a baking dish add oil, thyme, and garlic cloves. Cover and bake for 45 minutes or until cooked through.

3.  Take a break to play with your favorite guys!

4, Remove chicken from the oven, and serve with you favorite sides.

The chicken turned out very juicy and flavorful without being overpowered by garlic.  A great easy to prepare dinner, perfect for a week night dinner or a special occasion. So, how about you lovelies, any easy but delicious recipes you have recently tried?

    That looks totally yummy and easy! Love it! I have been a fan of salsa & chicken lately. So easy to cook. Season chicken breasts with taco seasoning and cover in salsa and bake in the oven for about 35/40 mins (can add some shredded cheese or not and cook for 10 more mins). Serve with salad or Spanish rice. Pretty healthy and easy to prep on week night. Also, serves as a great leftover on top of salad next the day.
