Today’s recipe comes from my friend Kate, who often graciously shows up on my doorstep and figures out how to make a dinner with the bare bones of what is left in my cabinets and fridge, ha! Everyone needs a friend like her!
4 Chicken Breasts
1/2 cup plus 2 tablespoons olive oil
1 tbsp thyme
40 peeled cloves garlic
Salt and pepper
1. Preheat oven to 350 degrees F.
2. Season chicken with salt and pepper. Add 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat.
3. Remove from heat, and in a baking dish add oil, thyme, and garlic cloves. Cover and bake for 45 minutes or until cooked through.

3. Take a break to play with your favorite guys!
4, Remove chicken from the oven, and serve with you favorite sides.
