Strawberry Dessert

Hi ya’ll! Sorry for my hiatus last week.  Sometimes life just gets in the way. But I do have a delicious and easy treat to share with you today.  Remember how a few weeks ago I went strawberry picking?  Well, I never got to share the yummy results of that sun filled day.  Once home with our treasure all washed and ready to go, Shelby and I set out to make a delicious dessert.

Strawberry Dessert

This little number was so easy to prepare!  For the crust we cooked pre-made pie dough in small tart pans.  Once cool, we filled the mini pie crusts with vanilla frozen yogurt.   Finally the sauce.  Oh the glorious sauce.  We liberally drizzled our desserts with a home made strawberry sauce that gets me drooling just thinking about it.

In a small saucepan we mixed two cups of cut strawberries, 1/2 cup white sugar,1  teaspoon of cornstarch and about a 1/4 cup water. Over medium high heat, we stirred occasionally until it came to a light boil.  And that’s it.  Deliciousness is ready.  I just wish we’d had more leftovers!

You can’t go wrong with a simple strawberry syrup! Yum. This summer kitchen play time has included: lots of stone fruit cobblers/crisps (TX peaches and plums), strawberry refrigerator pie, zucchini bread, squash blossom soup (seriously good), grilled peppers with lots of things, and cold packed pickles. I am hoping to pickle some jalepenos this summer. We’ll see…

My son calls our local farmers’ markets the “farm festival.’ What a hoot. :) Happy Wednesday!
