Two weeks ago I had a small BBQ with just 4 other people, my husband and I. It was one of those rare nights where everyone was in good spirits, the weather cooperated and the food all turned out delicious. Pretty much your picture perfect summer evening.
I decided to try a few new recipes including Tequila Lime Chicken by the infamous Barefoot Contessa. It was great and you can find the recipe here. However, the real show stopper of the night was this ridiculously easy ice cream pie recipe I found in Real Simple magazine. It literally took about 10 minutes to make and the men are still asking me, weeks later, when round 2 will be. Don’t you just love when something so easy is a hit?! 8 ounces chopped semisweet chocolate, melted
4 cups crisped rice cereal (such as Rice Krispies)
2 pints mint chocolate-chip ice cream, slightly softened
In a large bowl, combine the chocolate and cereal until the cereal is completely coated. Transfer to a 9-inch spring form pan. Press the mixture into the bottom and 1 inch up the sides of the pan. Freeze just until firm, 5 to 10 minutes.
Spread the ice cream in the prepared crust and freeze, covered, until firm, for at least 2 hours and up to 3 days.
